Seafood Paella with a ‘twist’

The birthplace of Paella is in Valencia (Spain) and for10419577_604241703043817_6165623944113699741_n this reason we use all the Spanish ingredients we can find in the UK. We also use responsibly sourced seafood from Haymans fisheries (www.haymansfisheriesoxford.co.uk), meat from Meat master (www.meatmaster.info) and fresh vegetables from various suppliers.FullSizeRender copy 2

There are many types of paella but we mainly make Chicken ‘Valenciana’ Paella, Seafood Paella, Paella Negra with squid ink, Chorizo ‘Perol’ Cordobes and Super Veggie/Vegan Paella. We have developed our own recipes and we describe all the ingredients we use but not our ‘culinary secrets’ to make the best paella in Oxford.


WE ONLY USE EXTRA VIRGIN OLIVE OIL FROM JAEN (SPAIN)


WHY ARE OUR PAELLAS GREAT?

Because we use:

  • Quality Spanish and Italian rice
  • Quality poultry, seafood and vegetable stocks
  • Fresh ad seasonal vegetables
  • Sustainable seafood and premium poultry (boneless chicken thighs)
  • Extra virgin Spanish olive oil
  • Portuguese sea salt
  • Turmeric (better and healthier colouring spice as opposed to paella colouring)
  • Spanish saffron
  • Fresh rosemary
  • Fresh thyme
  • Pimenton de la Vera dulce (Sweet paprika from Extremadura)
  • None of our ingredients have gluten

PAELLA TYPES

Seafood Paella – Rice, squid, mussels, prawns, runner beans, peas, garlic, smoked paprika, salt, thyme, extra virgin olive oil, turmeric

Paella negra -with squid ink – Rice, cuttlefish, onion, garlic, smoked paprika, salt, parsley, tomato, squid ink, parsley, extra virgin olive oil

Chicken ‘Valenciana’ Paella Rice, chicken thighs, runner beans, butter beans, rosemary, smoked paprika, garlic, salt, extra virgin olive oil

Chorizo ‘Perol’ Cordobes  – Rice, Chorizo, pancetta, onion, garlic, carrot, aubergine, runner beans, smoked paprika, turmeric, garlic, rosemary, salt, extra virgin olive oil

Super Veggie / Vegan – Rice, carrots, broccoli, onions, runner beans, red peppers, garlic, rosemary, smoked paprika, turmeric, salt, extra virgin olive oil

In addition we make the following cold tapas plates (ideal for starters):

  • Semi cured ‘Manchego’ Cheese
  • Hand carved Iberico ham ‘black leg’
