Chorizo Perol ‘Cordobes’
Perol ‘Cordobes’ is a similar type of paella pan but deeper. We serve it however in a paella pan due to a better visual effect. This dish is typical from Cordoba and it is essentially a peasant dish. The country side of Cordoba is surrounded by beautiful small villages and olive trees and this is the classic dish people made over the weekend with any ingredients found around, chorizo, onion, carrots, beans, etc. I was born in Cordoba and I have always been in love with this dish and its history behind shaped by the influence of Muslim, Jew and Christian past.
Paella rice, fresh chorizo, flat green beans, carrots, onions, aubergines, smoked paprika, extra virgin olive oil, thyme, rosemary, bay leaves and salt.
